TURKISH LENTIL SALAD

Turkish Lentil Salad with a honey mustard dressing. Easy and quick, ready in 7 minutes. Full of fiber, protein and vitamin K.

Ingredients

  • 1 can lentils, drained and rinsed (1 can = 15oz = 400g with liquid, or 150g cooked lentils)

  • 1 red onion

  • 1 handful parsley (dried will work in a push)

  • 3 tbsp olive oil

  • 1.5 tbsp vinegar (choose your favourite, all go well!)

  • 1.5 tbsp mustard

  • 1-2 tsp maple syrup (or honey for non-vegans)

  • 2 bell pepper (green and red)

  • 2 dashes salt and pepper to taste

Instructions

  1. Dice up the onion and cut the bell pepper into small pieces. Add both to a salad bowl.

  2. Mix in the lentils (if you use dry lentils, cook according to package instructions first).

  3. Rip up the parsley and add it to the bowl as well

  4. Now in with the vinegar, olive oil,mustard, honey salt and pepperand stir it all nicely.

  5. Have the salad with a slice of (whole grain) bread. Enjoy!
